- A pinch of asafoetida (hing)
- Salt to taste
- Oil for cooking
- Liquid
- 1.5 to 2 cups warm water (as needed)
- Optional Garnish
- Freshly grated coconut
- Ghee or butter for serving

Directions
1. Prepare the Dough
- Combine rice flour, chopped vegetables, green chilies, ginger, cumin, mustard seeds, hing, and salt in a bowl.
2. Add Water
- Pour warm water gradually and mix until a soft, pliable dough forms. It should be moist but not sticky.
3. Divide the Dough
- Make small lemon-sized balls.
4. Shape the Roti
- Flatten each ball on a greased banana leaf or parchment paper. Spread into a circle about 1/4-inch thick. Create a small center hole to aid cooking.
5. Cook on Tawa
- Heat a tawa and gently transfer the flattened roti. Add a little oil around the edges and center.
6. Crisp It Up
- Cook until edges turn golden and crisp. Flip and cook the other side similarly.
7. Repeat
- Prepare and cook all remaining portions.
8. Serve
- Serve hot with butter, grated coconut, chutney, yogurt, or pickle.
