  • 1 baguette or Italian bread, sliced
  • Olive oil (for brushing)
  • Classic Tomato & Basil
  • 4–6 ripe tomatoes, diced
  • 1–2 garlic cloves, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp balsamic vinegar (optional)
  • Salt and black pepper to taste
  • Avocado & Tomato
  • 2 ripe avocados, mashed
  • 2–3 ripe tomatoes, diced
  • 1–2 garlic cloves, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and black pepper to taste
  • Ricotta & Honey
  • 1 cup ricotta cheese
  • 2–3 tbsp honey
  • 1 tsp vanilla extract
  • Fresh strawberries or figs, sliced

Directions

1. Toast the Bread
  • Preheat oven to 375°F (190°C).   
  • Arrange bread slices on a baking sheet.   
  • Toast 5–7 minutes until lightly golden.
2. Classic Tomato & Basil Topping
  • Mix tomatoes, garlic, basil, olive oil, and balsamic vinegar.   
  • Season with salt and pepper.   
  • Spoon over toasted bread and serve immediately.
3. Avocado & Tomato Topping
  • Combine mashed avocado, tomatoes, garlic, cilantro, lime juice, salt, and pepper. 
  • Spread on toasted bread.   
  • Serve at once to avoid browning.
4. Ricotta & Honey Topping
  • Mix ricotta, honey, and vanilla until smooth.   
  • Spread on toasted bread.   
  • Top with sliced strawberries or figs.   
  • Serve immediately.
