Ingredients
Combine the Dry Ingredients: In a mixing bowl, whisk together the flour, salt, and sugar (if making sweet crepes).
Mix Wet Ingredients: In a separate bowl, whisk the eggs and then add the milk, melted butter, and vanilla extract (if making sweet crepes). Mix until well combined.
Combine Wet and Dry Ingredients: Gradually add the wet mixture to the dry ingredients, whisking continuously until you have a smooth, lump-free batter. Let it rest for at least 30 minutes to allow the flour to hydrate.
Heat the Pan: Heat a non-stick skillet or crepe pan over medium-high heat and lightly grease it with butter or oil.
